1. Tomato (टमाटर) - 8 medium sizes (800 gram)
1. Sugar (चीनी) - 100gm (7 tablespoons)
2. Tamarind - (इमली) - 1 tablespoon (soak in water for 15 minutes)
3. Salt (नमक) - 1/4 teaspoon
4. Vinegar (विनीगर) - 2 tablespoon
5. Kashmiri Mirch powder (लाल मिर्च पाउडर) - 1 teaspoon
6. Ginger (अदरक) - 2 inch

Steps to cook:
Rinse the tomatoes well in water and slice the top eye parts of the tomatoes and roughly chop the tomatoes.
Take a pressure cooker and add chopped tomatoes, ginger and water (half cup). Cook for 3 whistles on medium heat.
After 3 whistles turn off the heat and let the pressure release on its own. Open the lid and let it cool down the boiled tomatoes on its own.
Once it's a cooldown, blend the boiled tomatoes and make a smooth puree. Take a strainer and strain the tomato puree.
Heat a skillet on medium flame and pour the tomato puree, cook on low heat for 5 minutes.
After 5 minutes, add, sugar, vinegar, tamarind water, salt, Kashmiri red chilli powder and give a nice mix.
Cook on low to medium flame for 15 to 16 minutes or continue to cook till water does not separate or till it starts thickening and reaches a ketchup-like consistency. Keep stirring at intervals.
Once it's done, turn off the stove and let the tomato sauce cool at room temperature. Then transfer tomato sauce in an airtight jar and keep it in the refrigerator and use for 1 month.
Serve tomato sauce with any snacks and appetizer. 😊
