To avoid common problems some people mostly encounter with these baguettes, follow this standard advice procedure and you won't go wrong.
1. Stick to the recipe rigidly, the quantities are very important for successful results
2. Use scales for the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate
3. Use proper white bread flour with at least 12% protein, check the ingredients list on the side of the flour bag, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour, plain or all purpose flour is not strong enough for making bread.
4. Check your yeast is working you can do a yeast test as shown in my sandwich bread video here paworld.info/face/v/eY2mtJm6unBulZw

    • Turn up the heat, I use a fan assisted oven in the video. Which runs hotter than indicated on the dial. Only once I used another recipe and made loaf bread but it was so heavy and didn’t last to its freshness more then few days. I am sure to try ypur recipe with bread flour. And I totally agree on measuring jugs and grams and cups confusing for me. I even ordered kitchen alarm clock for correct proofing times. I will check the play list and once again thank you for prompt replies. PS instead of giving Meghan voice over of Disney characters which is 🤦🏽‍♀️ They should approach you .   • I made these today and it is the BEST bread I have ever eaten. I will be making these often now- they are almost too good! Thank you! If you have an electric oven they might take longer to cook, I found that they took 35 min. In total in my electric oven.

    • Glad you like them! Turn up the heat, I use a fan assisted oven in the video. Which runs hotter than indicated on the dial. Increase your temperature to 445°F/ 230°C next time, and you'll see a big difference in the results.

  • Hello John. First attempt at French baguettes (or anything). Everything seemed fine until after the 32 minutes on the couche. Baguettes did not some plump like your video. Gave them an extra 10 minutes before going in oven. Still didn't look like they had risen enough. Been baking for 25 minutes now and not looking good. Used Red Star active dry yeast and King Arthur bread flour. Any ideas ? Thanks

The bread will stay fresh for 2 to 3 days depending on the ambient conditions of the environment they are kept in, but they won't stay crispy for more than 12 hours. The best way to preserve them is to freeze what you are not going to use straight away, but freeze them soon as they have cooled from the oven, that way they stay very fresh, you can defrost in the microwave, on the defrost setting, it only takes a couple of minutes they even stay crispy that way.

  • The bread looks great! FYI, it's "kosher" salt, a Judaic rule regarding food. I plan on making baguettes this week and appreciate your tip about putting a pan of boiling water in the oven to create steam. Hopefully my baguettes will look as good as yours!

    • @John Kirkwood I'm 100% in accord about using grams instead of cups/spoons for measurement! I have plenty of sets of measuring cups/spoons but my digital scale is what I use. I usually convert recipes into grams before I start to amass the ingredients. I use King Arthur flour, which is high in protein, and I like their First Clear flour and rye enhancer to make a traditional rye bread. (I also have pumpernickel flour but have not yet used it!). John, I appreciate your smarts and willingness to share what you know! THANK YOU!

Please follow these 4 simple rules when making these baguettes. Give me a comment if you need any more help. 1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results. 2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast. 3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread. 4.
