1kg 5 Stagioni Napoletana Pizza Flour, Tipo 00 (RED)
30g salt
1-2g fresh yeast (or half teaspoon of dry yeast)

Thats bc its fresh buffalo mozzarella. The other mozzarella that you normally see should be baked with the pizza till it melts :)

I started this recipe yesterday with regular flour. I plan on trying to find his kind of flower here in Canada depending how the pizza turns out today! Thank goodness for Cantinas! It was the perfect temp for the 24 rise!

Most of the Neapolitan pizza dough recipes I've seen on the internet say that we need to use make some kind of a high hydration dough (more than 70 - 75%). Your dough is much more manageable with a lower hydration.
not all recipes are the same, but this one is amazing, one of the best you will ever find around!

the solution is to make it at home! 😁 Well take-away pizzas arrive cold and mushy because they're not eaten right away, while pizza should be eaten immediately after cooking!

Why put the cheese on after it comes out of the oven? Don't you want the cheese melted?
It was a Buffalo mozzarella, if you cook that kind of cheese it becomes soggy

Just ate this pizza. Taste very good. But this pizza dough is very difficult to make nice round shape. First trick is how to take dough balls from tray without damaging its shape. Second tricky thing is to stretch and flip. My dough was very very stretchy. Really difficult to make nice shape and not use rolling pin. Need a lot practice because this pizza is really delicious.

I did use your techniques for spreading the dough, etc....I will try my to mimick your dough sometime soon, but I only have fast acting yeast, is that ok?...also, can you recommend a yeast brand and flour brand (available to consumers)....? I made the pizza today. Simple but authentic and really amazing dough. It is so easy.Thanks to this video I suceeded making my real Italian Neapolitan pizza after having tried many other instructions. I baked the dough in a mini oven ( precooked the dough and tomato ). Even though the pizza turned out to be really authentic and amazing like at the Italian restaurant.Thanks.

I make it, using this same flavour, same dough but when coocked, this is like a rock, extreme crusty, maybe more like a cookie... 24hs in fermentation for nothing

Hi, you need to use a pizza stone, and you need the highest temp.
Great Instruction! One question, what temperature of water did you start with? I could get to the temp required pretty quickly without kneading if I started with warm water assuming I didn't use spring back test.

They alwayw say cover with damp cloth.. but it got stuck to mine and ruined it!! Had to throw it away.

Pizza crust should be crunchy on the out side and bread like inside Not with a bunch of hot air bubbles. My crust is very good, if you don't eat my crust? Its not a good pizza! I pull my myself away from the crust edges, to save some to make Meat loaf from them ~ Pizza crust make the best meat loaf

Hey what happens if my oven only goes to 500 Fahrenheit, cook a bit longer? It has convection as well so I think it can be pushed a bit hotter..
Of course it depends on your oven, if it reaches a low temperature then let it cook a little more!
