Karach Halwa Ingredients
Roasted Nuts pista badam kaju Pistachios Almonds Cashews 1 Tbsp each
Magaj or melon seeds 1 Tbsp
1 Tsp Hari Ilaychi green cardamom powder
1 Cup corn starch plus 3.5 cups water
Pinch of orange color with 1 tbsp water
6-7 tbsp ghee clarified butter
2 Cups cheeni sugar plus 2/3 cup water for syrup
1/4 tsp Satri or citric acid

Mam very good recipe but corn starch,corn flour and ararot ye teeno alag cheez hoti h magar kaam ekhi hota h or apne bola kuch bhi bol sakte vo galat h but very nice recipe bye 😂😂❤️
Normally people call corn starch as corn flour, I know corn starch is the powder of endosperm of corn, but Corn flour is powder of both innermost part as well as Husk of corn , I didn't say everything is same I meant in a layman everyone call that product as flour. And corn starch and araroot works the same for the recipe, you can try it

Hi Amita, this is a very good recipe, we could get nice clear halwa with good textue. But the chewiness was still not very good after a long process of constant stirring. Since you are a good cook and love halwa, I wouild like you to try out paworld.info/face/v/qIWJwoW42Xx9ano Shazia's receipes...chewy and perfect....a very different approach to halwa making, we could get chewyness exactly as the Bombay halwa I had bought from Mumbai Dadar's Damodar Mithaiwala or from Karolbaugh. @Cumin Curry total time 1 hour se jyada hua tha. meine aapke measurement ka quarter sab kuchh liya tha. so is hisaab se ghee 1.5 tbsp liya tha. chaasni ko sugar completely melt hone tak pakaya tha. kyun ki meine powder sugar nahi liya tha, to chaasni ko jyada pakaya tha. lemon juice quantity jo citric acid nahi hone par daala tha woh sahi tha?

I made this now I was waiting until it becomes like paste and all what happened was it started to separate and all the ghee started to ooze out. ☹️☹️☹️ dunno why so threw everything
@Cumin Curry yep I took everything as you mentioned I did stir for 40 mins it was in good consistency like a thick paste, but when doing the plate test it was not ready . So I waited until it becomes a goopy blob like yours how it turned in the end. Unfortunately at that point it started to curdle and it put out all the ghee it absorbed.. 😟
Dear have you taken all the ingredients correctly and followed the same recipe, in the recipe I have shown initially it will curdle bit then you need to wait until paste absorbs all the ghee, need little bit patience as bit tricky Recipe

And after cutting also don't put into fridge otherwise it will become very hard and you won't be able to eat it easily, Room temperature is best for This sweet

Method First make Sugar syrup, no consistency needed, just Sugar should melt in water, then add satri/Citric acid so that Cristlization won't occurs later, make corn starch slurry with water add into sugar and while continuously stirring it, as it will form lumps immediately, after 3-4 minutes you will notice that it will become like a Paste, keep low flame, add 1 Tbsp Ghee/ clarified butter, once it is absorbed add another Tbsp Ghee/ clarified butter repeat the process until clarified butter finish, Keep low flame continuously stirring it, paste will become more glossy, chewyness elasticity depends on how long you Cook it, so lot's of other people make this mistake and ask for the secret by which it become more elastic, so please keep this in mind, I Cooked it for more than 90 minutes, keep checking in between, take out little Halwa sample on some plate, cool it stretch it, you can switch off the flame according to your desired consistency, add food colour and chopped nuts before switching off the flame, pour it in a greased tray cool it cut it and wrap with Butter paper or cling wrap as it is very sticky. Read through all the comments but unfortunately no one has succeeded to achieve the desired chewiness and elasticity despite having followed all the do's and dont's. It sounds like there is a secret ingredient that brings the elasticity in the halwa and you don't want us to know about it

There is no secret ingredient dear but only one secret step which I repeatedly mentioned in all the comments that chewyness comes for how long you Cook it, it will become more elastic, and using satri is important, Which many people forget to add, and yes dear There are people you succeeded to achieve that consistency after multiple attempts you can check all the comments thoroughly even I mentioned my personal number of attempts for this recipe, it doesn't come out perfectly in first 4 attempts. There is no secret just practice with focus and right measurement as it's a bit tricky Recipe

Yes dear you can, in that case you don't need any food colour as custard powder already have but there will be texture difference. Custard powder Halwa won't be as chewy as Karachi

You cooked properly 1 he 10 minutes is a good time to get the elasticity, have you taken all the ingredients correctly!! And did you keep checking samples as I shown in the video like take out little Halwa in between and check the elasticity??
