सुबह- शाम का नाश्ता व छोटी-छोटी भूँक के लिए बनाये क्रिस्पी लच्छा मठरी

* Moong Dal Yellow (मूंग दाल) - 1/2 cup
* Wheat flour (गेहूं आटा) - 1/2 cup
* All purpose flour (मैदा) - 1/2 cup
* Salt (नमक) - some
* Carom seeds (अजवाइन) - some
* Ghee (घी) - 1 tbsp
* Oil (तेल) - for frying
* Corn flour/Corn starch (अरारोट/कॉर्न फ्लोर) - 2 tbsp
* Ghee (घी) - 2 tbsp
Soak some Moong Dal for at least 4 hours. Then put the Dal in the strainer and drain out the Water.
Grind the Dal in the mixer and make a smooth paste of it.
In a bowl, take some Wheat Flour, All Purpose Flour, Salt, some Crushed Carom Seeds, Ghee and add ground Dal paste gradually in it and bind the dough. Then cover it and keep it for 20-25 mins.
In a small bowl, take some Corn Flour and add Ghee in it and make a paste of it.
Then divide the dough in 2 parts. Take 1 part of dough, roll it thinly and apply the paste of Ghee and Corn Flour and then dust some All Purpose Flour on it and fold it from both ends. Again grease some paste of Ghee and Corn Flour, again dust some All Purpose Flour and fold it.
It will become square in shape. Dust some All Purpose Flour and roll it again.
Grease some paste of Ghee and Corn Flour then dust some All Purpose Flour and fold it and overlap it with the other side. Then keep it aside and do the same process with the other part of the dough. Then cut the Mathri and fry them in the heated Oil.
We have to do this process to make layers in the Mathri.
In this way, Lachha Mathri will get ready. You can store it for long time.
