Korean mushroom soup (Beoseot-deulkkae-tang: 버섯들깨탕) is a delicious, nutritious, savory soup made with mushrooms and perilla seeds powder. The perilla seeds powder makes the broth soft and nutty, and the beef brisket and the mushrooms are chewy, soft, and crispy, giving this soup a very unique taste and texture.

  • I finally found perilla seed powder! Last time I made this I used a substitute of a substitute lol. Taste much better this time and I can try her mushroom stir-fry next with the leftover veggies!   • Maangchi, the Korean stores here don't have perilla flour. Can there be a substitute for that? Or just leave it out and just use corn starch for thickening? I want to try and have the flavor or the perilla flour. Would using perilla oil be useful in giving that flavor that perilla flour gives? If it might, when would I use it in the dish? Would it be added like when sesame oil is added to the dish? Near the end of the cooking process.

    • @Maangchi thank you for your reply. I found perilla powder. With it in hand I made the soup for our Christmas dinner. LOVED IT! I made a little change. I didn't have the rice flour. I forgot to get it. In place of it i thickened the soup with corn starch. Thank you for this recipe.

  • I added a tablespoon of gojucjang and it was pretty bomb. Next time i make this i will cook the onion and carrots and add fennel before adding in stock. Overall this stew was good plain but you can definetely add more to this recipe imo.

I believe the fish sauce will provide great taste. Is there anything that could be added to make up for the loss of the beef? Or just having the mushrooms will be fine.     • Use vegetable stock instead of water and swap the fish sauce with soy sauce. Adding tofu would also add some protein.
