Anda khandoli. This is a Kolhapur special street food or we can call it as Kolhapuri sunny side up. Khandoli is a Marathi word and it means to chop finely. Now you must have got the meaning of the name. This is very easy and simple recipe. This can be a perfect recipe for bachelors. It turns nice and crunchy from both sides and tastes just awesome. If you are bored of havening the same anda recipes then this is a perfect option for you. This real quick recipe can be a good and healthy breakfast option. Ingredients:
• Butter
• 1 Egg
• Red chili powder
• Chat masala
• Bread slice
• Finely chopped Onion
• Finely chopped Coriander leaves
Method:
• Heat up a pan on medium heat and add butter.
• You can use oil in place of butter.
• Break an egg in the pan and sprinkle red chili powder, chat masala on it.
• Cook on medium heat until lower side turns nice and crispy.
• When it is about to get cooked, place a bread slice on it and spread butter on it.
• When the lower side begins to get nice crisp flip it over and roast until bread turns nice and
crispy.
• Again sprinkle red chili powder, chat masala on upper side the egg.
• You can add kanda lasun masala if you want.
• After frying the bread for about 3-4 minutes, when it turns nice and crispy, take it off into a
dish.
• Cut it into pieces and spread onion, coriander leaves.
• Kolhapuri anda khandoli or sunny side up is all ready.
