Today's recipe is dubu-jorim (spicy braised tofu). It's fresh tofu braised in a savory-spicy sauce and pan fried with caramelized onion, garlic, and green onions, making it juicy, a little spicy, crispy on the outside and soft on the inside. It's a delicious side dish for rice, noodles or porridge, and tastes meaty even though it's a totally vegetarian dish.

  • Ahhhh, when you have all the ingredients in your kitchen your life seems to make sense. I added about 1TBspn of Gochujang into the sauce doubled the sugar for a sweet & spicy effect, had this over a bed of orange bell pepper(monitoring carbs) instead of rice and it was Delicious; they complimented each other well.

  • Has anyone tried freezing extra firm tofu? Or even firm (I just use extra firm). I have found it creates a different texture to the tofu. It become chewy. I squeeze some of the excess water out when it defrosts and, I think, the chewy tofu absorbs more of the liquid it is in. I intend to try this out. Try recipe as is first and then with frozen Tofu. Ms Maanghi? would love your input on this.
