This is the classic, spicy, traditional napa cabbage kimchi called tongbaechu-kimchi, aka baechu-kimchi, or pogi-kimchi. But this dish is so common that most Koreans simply call it "kimchi." When people talk about kimchi, this is the dish they're referring to!

I wish I saw this before I made kimchi, I think I made a very big mistake, I have soak the cabbage in salted water and added salt in each leaves aswell, then washed it thoroughly, the I sail the radish in salt aswell and rinsed it, I don’t have the shirmp sauce so I have used shrimp paste as instead, when I’m done mixing all the ingredients it’s end up kinda salty 🤦🏻♀️ I have put them in my casserole dish with lid and leave it in my kitchen counter Is there any help if there’s any possibility to reduce the saltiness? I hope someone will reply

You can skip radish or use daikon and you don't need to use saeujeot (salty fermented tiny shrimp). The kimchi will still turn out delicious.

Well, I have never tried Kimchi and since I live in France I haven't found anywhere around here where I live so I would like to make it myself and I was wondering if when we add fish sauce and the minced shrimps does it smell like fish when we eat the kimchi because I think that it would be strange and I'm not sure that I would like it? Pease give me your opinion and also if I don't have hot pepper flakes can I just use chilli pepper powder?

Omg i just made this and its so tasty!!!!!! I have all the ingredients but the fermented prawn so I used belacan instead. Its Malaysian/Indonesian shrimp paste and I mixed it with a bit of water to turn it into a paste and it works just as good! I added more radishes and more korean chilli flakes because I love radishes and spice..

I made the huge mistake of making kimchi with my bare hands and I have arthritic fingers. I was in terrible pain for hours. My advice is if you don’t have Maangchi’s hands then wear gloves!

Question! You said you let it ferment in the jar for up to 36 hours. Can you leave it in this same jar if you want to leave it fermenting for a couple of months? Or do you keep in fridge? Or must it be a different container? I'm trying to learn more about fermenting.

One more tip, if you don't let the metal touch the kimchi, it's delicious. It tastes better if you tear it with your hands than cut it with a knife or scissors. Lactobacillus die when it touches metal. It's like you shouldn't eat yogurt with a metal spoon.
When storing kimchi in the refrigerator, put a piece of plastic bag on the top and keep the kimchi out of oxygen, so that white mold does not grow on the top. And put it in a place where the temperature is the most constant in the refrigerator. The storage temperature of kimchi is the most important point in maintaining the taste of kimchi. This is why Koreans use kimchi refrigerators separately. This is because there is little change in temperature than a general refrigerator, so it maintains the taste of kimchi. @Mama Phoenix kimchi ferments in the fridge too. Different probiotics becomes active in different temperatures, which creates fermentation process and determines flavour and shelf life of the kimchi. You can’t ferment kimchi at room temperature far too long like a week because kimchi will go off. Try mangchi's way and you will understand the science behind kimchi making process.

Maangchi, I have a little problem. My salt intake is restricted. But I love kimchi. When I went to see the nutritionist, she said, "What? You have been eating kimchi?" I thought she was fascinated. No. She told me she was concerned about the salt content. "If you really want to eat kimchi, why don't you make your own?" But watching this video, I realized there's a lot of salt which is natural for fermenting. How can I reduce the salt and still be able to eat kimchi? Please teach me, Maangchi. Thank you.

Maybe and I say maybe because I'm not from Korea, homemade kimchi has still less salt than the store-bought, ready made kimchi. And as Mrs. Maangchi told you, eat just a small amount, you will see after check-ups what happens.Hope that helps.
Eat just small amount kimchi because salt is very important ingredient to make good kimchi. Salt makes the cabbage stay crispy. Bland kimchi goes easily soggy or bad.

In Turkey, if a housewife can cook a good rice, it means she's cooking very well, like good kimchi. (Turkish rice is not mushy or juicy. The good rice should be grains) Kimchi is a great meall thxx

Congratulations! By the way, you can eat your kimchi right after making it. Keep it in the fridge and start eating it. It takes about 2 weeks to ferment fresh kimchi in the fridge but you can eat it anytime. If you like to ferment the kimchi quickly, keep the kimchi jar or container on the kitchen counter for 1 or 2 days until it tastes a little sour. Then put it into the fridge and eat it until it runs out.

In Brazil, the tradicional everyday food is rice and beans, with a Lot of kinds of side dishes (chicken, beef, eggs, pork or Just vegetables)...If you make a good and fluffy rice, and a delicious seasoning beans, you are able to try another difficult Brazilian dishes...
I'm not entirely sure about all the Indian states since all the states have their own traditional dishes but I believe that if someone can cook simple regular food like rice, dal, sabji (vegetables cooked in spices like potatoes, cauliflower, cabbage, etc) n roti (chapati) properly then they're really good cooks. I believe that the most basic dishes are the true test of taste. Roti is specifically difficult to make cuz we need to kneed the dough properly first n then roll them thin n round then cook them on "tava". If they inflate properly then bravo! That's brilliant!
